Generous portions of Cascade and Chinook Hops are added throughout the brewing process to create Rubicon’s Flagship Ale. Golden in color with an assertive hop bitterness. This beer won gold medals at the Great American Beer Festival. A true American Classic.
MONKEY KNIFE FIGHT PALE ALE
A balanced American Style Pale Ale using Crystal Malts and Mt. Hood Hops providing a smooth finish. A great session beer.
AMBER
Crafted from a blend of three malts and imported German Hops. A smooth and malty beer that is perfectly balanced.
STOUT
Our darkest ale is brewed in the famous Irish Dry Stout style. We use dark roasted malts and imported English East Kent Golding Hops. Served at our pub
with nitrogen for a truly classic presentation. A bronze medal winner at the
Great American Beer Festival.
EMPIRE IPA 6.0%
Our version of a traditional English Style IPA. Brewed using Golden Promise Malt,Caramalt and East Kent Golding hops for that authentic English flavor and aroma. Combined with an English yeast to round out the overall character of this very delicious English IPA.

ROSEBUD STRONG ALE 2008 9.2% 
First brewed in 1995 on the day Jerry Garcia Died, and is named after one of his guitars. This complex multi grain ale is made with a blend of ten types of malted barley. The spicy hop character comes from select German and Czec Hops. Served unfiltered to allow maximum flavors for your enjoyment.

HOP SAUCE—RUBICON 8.9%
This is a double IPA with huge flavor and aroma. The recipe has 10 different
hop varieties: Summit, Columbus, Chinook, Cascade, Vanguard, Glacier,
Goldings, Bravo and Sterling hops. Double dry hopped for your drinking
pleasure!!!! We also put 10 pounds of New Zealand Mouteka hops in the
serving tank for the final touch. The Rubicon is celebrating BATCH #3000 with the creation of our HOP SAUCE!
