The following beer is what we have on tap here at the Rubicon this week.
CZECH PILSNER 5.0%
Brewed in the Bohemian tradition, using the finest imported European Malts and Hops. Cold lagering results in our version of a classic European style Pils.
INDIA PALE ALE 6.5%
Generous portions of Cascade and Chinook Hops are added throughout the brewing
process to create Rubicon’s Flagship Ale. Golden in color with an assertive hop
bitterness. This beer won gold medals at the Great American Beer Festival. A true American Classic.
AMBER 5.0%
Crafted from a blend of three malts and imported German Hops. A smooth and malty beer that is perfectly balanced.
STOUT 4.8%
Our darkest ale is brewed in the famous Irish Dry Stout style. We use dark roasted malts and imported English East Kent Golding Hops. Served at our pub with nitrogen for a truly
classic presentation. A bronze medal winner at the Great American Beer Festival.
MONKEY KNIFE FIGHT PALE ALE 4.5%
A balanced American Style Pale Ale using Crystal Malts and Mt. Hood Hops providing a smooth finish. A great session beer.
OL’ MOE PORTER 7.2%
Rubicon’s West coast style porter. Named after our first Brewmaster, Phil Moeller. Inspired by our early days as homebrewers, we make this beer strong and malty with lots of West coast hops. Brewed using pale malt from England, Pacific Northwest malted wheat, dark crystal malt, German Munich malt and Chocolate malt. Hopped with Columbus and Cascade from the Yakima Valley.
IRISH RED ALE 6.5%
Strong Hoppy Red available from January 1st though St. Patrick’s Day. Deep garnet in color, brewed with dark crystal malt and abundantly hopped with cascade and centennial to create smooth red ale with a noticeable hoppy finish… a RUBICON cult favorite.
CAPRICORN BLACK IBA 6.1%
This dark brew is a very unique creation originally conceived at home by one of our brewers.
It is a combination of styles that came from his love of Stouts and Porters coupled with his
thirst for bitterness and aroma found in IPA. It is an IPA with a heart of darkness, an
India Black Ale.
REX DOUBLE INDIA PALE ALE 8.8%
$5.00 Pint (Limit two)
Brewed at the request of our good friend, and local bike frame builder, Steve Rex.
This hand built double IPA features extra malt and generous portions of hops.
Stay in the saddle, and keep the rubber on the road!

WINTER WHEATWINE 10.6%
First brewed at the Rubicon in December 1988. This wonderful ale was inspired by the late
Jim Pell. While attempting a batch of home brew he came up with a summer wheat ale that was over 10% abv…WHEW! This was a big mistake for him, but one we are proud to
continue for your enjoyment.

CROSSING THE RUBICON
When Julius Caesar and his army crossed the Rubicon in 49 B.C., they violated an ancient Roman law which forbade any general with a standing army from crossing the Rubicon River and entering Italy proper. Caesar is said to have considered at length whether to cross, for he knew that by crossing the Rubicon he was committing an act of war and there would be no turning back. The act of crossing the Rubicon did lead to civil war, and Caesar emerged as ruler of Rome.
The phrase “Crossing the Rubicon” has survived to refer to any step that commits a person or people irrevocably to a risky and revolutionary course of action – similar to the current phrase “passing the point of no return.”
So cross the Rubicon and come in for pint and some great pub grub.

In the slower winter months, the Rubicon brewers have a chance to put focus on the their favorite seasonal beers. This year, Aldred Griffin III, one of the Rubicon’s brewers, brought back a recipe that originated in his homebrewing days… the Capricorn Black.
Here is his story:
“About 8 or 9 years ago I was doing a lot of homebrewing, and, at the time, I was working as a cook at the Elk Grove Brewery (now closed). One of my favorite beers there was the Winter Warmer Porter. I love the dark beers. But, I also had a love for the hoppy flavors of an India Pale Ale, especially the Rubicon IPA.
So we started pouring ourselves “brewers” black & tans using the Porter and IPA. I really liked the contrast of the roasty, dark malt flavors & the citrusy and pine hop flavors of the IPA. Being an adventurous homebrewer, I said, “I can make this at home!” So several homebrew batches later, and several years of professional brewing later, I have the pleasure of brewing the CAPRICORN BLACK– Rubicon’s India Black Ale.
Now there are a few other breweries who brew this style of beer, but I am partial to my version… an IPA with a heart of darkness. And I am not the only one. Last year we had a really positive response to the Capricorn. And this year, although I changed up the dry-hopping a little, the recipe remains the same. I’m sure it will be just as good– if not better– than last year.”
